Ingredients for Paneer Aloo ki Sabzi:
1. Paneer : 250 grams
2. Potatoes : 1/2kg
3. Tomatoes : 3 medium size
4. Ginger : about one inch piece
5. Green chilies : 7 to 8
6. Coriander powder : 2 tablespoons
7. Cumin powder : 1 tablespoon
8. Turmeric powder : 1 tablespoon
9. Kashmiri red chili powder : 1 tablespoon
10. Black pepper powder : 1/2 tablespoon
11. Asafoetida
12. Bay leaves : 2
13. Kasuri methi
14. Garam masala
15. Ghee : 2 tablespoons
16. Mustard oil
17. Salt as per taste
Method of making Paneer Aloo ki Sabzi:
First of all, boil the potatoes and let them cool, then peel them and cut them into four pieces. Now heat a pan on the gas and add oil and heat it well.
As soon as the oil is hot, add potatoes and add a little salt and fry them well by turning them over. Now take out the fried potatoes in a plate and again add some oil in the pan and heat it. Cut the paneer in square pieces and fry them lightly.
Now heat the oil again and add asafoetida and bay leaves and add grated ginger. Let the ginger turn light golden and then add finely ground tomatoes and green chillies.
Reduce the heat of the gas completely and add coriander powder, red chilli powder, cumin powder, turmeric powder, black pepper powder and fenugreek leaves and fry the spices well on low flame until the spices start to smell good.
Now add water as per requirement and let the gravy boil. As soon as the gravy starts boiling, add potatoes and paneer to it and cook the gravy well for about ten minutes. Now add garam masala and ghee and cook for two more minutes and then turn off the gas.
Now, very spicy and tasty paneer aloo ki sabji is ready. Serve it with roti, paratha, puri or rice.
