Ingredients for the spicy bitter gourd vegetable:
1. Bitter gourd : 1/2 kg
2. Yellow mustard : 5 table spoon
3. Coriander powder : 2 table spoon
4. Red chilli powder : 1 table spoon
5. Turmeric powder : 1/2 table spoon
6. Mango powder : 1/2 table spoon
7. Mustard oil
8. Panchphoran : 1/2 table spoon
9. Bay leaf : 2
10. A pinch of asafoetida
11. Salt as per taste
Method of making spicy bitter gourd vegetable:
First of all, cut the bitter gourd into four pieces and wash it well. Now heat oil in a pan on the gas, add a little more oil so that the bitter gourd gets fried well. As soon as the oil gets heated, add bitter gourd in it and add a little salt.
Fry the bitter gourd well on medium flame by turning it over. Now take out the fried bitter gourd in a plate. Now whatever oil is left in the pan after frying the bitter gourd, if there seems to be less oil to fry the masala then add some more oil, and add panchphoran and bay leaves.
As soon as the panchphoran and bay leaves start crackling, add asafoetida, grind yellow mustard in a mixer and add it, add coriander powder, turmeric powder, red chilli powder and fry the spices on low flame till a nice aroma starts coming from it.
Now add dry mango powder and stir for a minute, and then add water as per requirement. Let the gravy boil well, then add fried bitter gourd in it. Add bitter gourd and cook well for about ten minutes and then turn off the gas.
Now the very spicy bitter gourd vegetable is ready. Serve it with roti or rice.
