Ingredients to make Dum Aloo Recipe:
1. Potatoes of small size: 1/2 kg
2. Tomato : 3
3. Green chilli : 4
4. Cashews : 10 to 12
5. Whole coriander: 2 tbsp
6. Cumin: 1 tablespoon
7. Black pepper: 8 to 10
8. Cloves: 5
9. Green cardamom: 2
10. Poppy seeds: 1 tablespoon
11. Watermelon seeds: 1 tablespoon
12. Ginger: about one inch piece
13. Bay leaf: 2
14. Kasuri Methi: 2 tbsp
15. Garam masala: 1/2 tablespoon
16. Ghee: 1 tablespoon
17. Mustard Oil
18. Finely chopped coriander
19. Dry red chilli: 2

Method to make spicy Dum Aloo:
First of all, boil and peel the potatoes, and then make holes in it by pricking it all around with a fork.
Now heat oil in a pan. When the oil gets heated well, put the potatoes in it, add about one spoon of salt, and fry the potatoes well by turning them upside down on high flame and take them out in a plate. , Add enough oil to fry the potatoes properly.
Now heat a pan, and then add coriander, cumin, cloves, cardamom, black pepper, red chilli, poppy seeds, watermelon seeds and fry on low flame.
Cool the roasted spices and grind them finely in a mixer. Now grind tomatoes, green chillies, cashew nuts and ginger all in a mixer.
Heat oil in a pan. As soon as the oil gets hot, add five phoron in it. As soon as the five phoron starts crackling, add a pinch of asafoetida, bay leaf and then tomato, ginger, cashew and green chillies which we had grinded. Put it in.
Now fry the spices well for five minutes on medium flame, and then add Kasoori Methi and stir it for a minute. Now add the roasted spices and stir for one more minute and then add three glasses of water and add salt as per taste and let the gravy boil well.
When the gravy starts boiling well, add fried potatoes to it and cook on medium flame for about ten minutes, and then add garam masala, ghee and green coriander and cook for one more minute and then turn off the gas.
This Aloo Dum without garlic and onion tastes very spicy. You can serve it hot with roti, puri paratha or rice.
