Ingredients for Vada Pav :
1. Pav : 6
2. Potato : 5 to 6
3. Mustard : 1/2 table spoon
4. Cumin seeds : 1/2 table spoon
5. Ginger : Small piece
6. Curry leaves : 15 to 20
7. Lemon : 1
8. Tomatoes : 2 large size
9. Dry red chillies : 4
10. Coconut with shells (dry coconut) : Cut into 9 to 10 small pieces
11. White sesame seeds : 2 table spoon
12. Tamarind
13. Green chillies : 8 to 9
14. Asafoetida : A pinch
15. Coriander leaves
16. Mustard oil
16. Gram flour
17. Rice flour or corn flour
To make Vada Pav, first of all make three types of chutney, because The taste of Vada Pav comes out only because of the chutney.
First of all, let's make tomato chutney:
To make tomato chutney, first heat a pan on the gas, as soon as the pan gets hot, add 2 tablespoons of oil in it, and then add cumin seeds, 4 dry red chillies, and then cut the tomatoes into four pieces and add them. Now add one teaspoon of salt, and 2 teaspoons of sugar and cook the tomatoes for three to four minutes. Now when the tomatoes cool down, put them in the mixer and grind them to make chutney. Tomato chutney is ready.
Now let's make green coriander chutney:
To make green coriander chutney, first wash the coriander thoroughly and put it in the mixer, and then add four to five green chillies, a small piece of ginger, salt according to taste, and cut a lemon and extract its juice, and then grind all the things and make coriander chutney. Coriander chutney is also ready.
Now let's make dry coconut chutney:
To make coconut chutney, first heat a pan on the gas, as soon as the pan gets hot, heat oil in it, and then add chopped coconut, dry red chilies, curry leaves, white sesame seeds and fry on medium flame for three to four minutes, now put all the things in the mixer, add salt as per taste and a small piece of tamarind and grind it. Do not add any water to this chutney, this chutney is made dry. Coconut chutney is also ready.
Now let's make potato vada:
To make potato vada, first boil the potatoes and let them cool. When the potatoes become cold, peel them and mash them well with a potato masher or by hand. Now heat a pan on the gas and then pour oil in it, add mustard seeds, cumin seeds and let them crackle, and then add asafoetida, curry leaves, ginger and green chilies coarsely crushed and put them in it.
Add ginger and green chillies and stir for a minute, and then add mashed potatoes. Add potatoes and fry on low flame for five minutes and then cut half a lemon and add its juice, add finely chopped coriander leaves, and mix everything well.
When the roasted potato cools down properly, make small lemon sized potato balls. Now in a bowl, add half a bowl of gram flour, four to five spoons of corn flour or rice flour, one tablespoon carom seeds, half a tablespoon of turmeric powder and water and prepare a batter. The batter should neither be too thin nor too thick.
Now heat the pan again. When the oil is heated properly, wrap the potato ball in the gram flour batter and put it in the oil and fry the vada on medium flame by turning it over and over until it becomes golden. Fry all the vadas in the same way. Our vada is ready. Cut some green chillies from the middle and fry them in oil. Add a little salt to it and mix.
Put the gram flour batter in the hot oil with your hands and make some boondi and keep it aside.
Now let's make Vada Pav:
To make Vada Pav, first cut the Pav from the middle. Now with the help of a spoon, apply tomato chutney on both the sides, top and bottom of the Pav, then apply coriander chutney, now add coconut chutney, add some boondi, now add potato vadas and a fried green chilli. Mumbai's very famous street food, Vada Pav is ready.
