Ingredients for making mustard greens :
1. Mustard greens : 250 grams
2. Spinach : 250 grams
3. Bathua : 250 grams
4. Radish greens : One handful
5. Tomatoes : 4 large size
6. Ginger : One and half inch piece
7. Green chilies : 6 to 7
8. Asafoetida : A pinch
9. Corn flour : Half a small bowl
10. Mustard oil
11. Salt as per taste
Method of making mustard greens :
To make mustard greens, first clean all the greens and wash them well four to five times by adding water in a big vessel, so that no dirt remains in the greens, and the greens get cleaned well.
Now chop all the greens finely and put them in a cooker and cook for four to five whistles on medium flame. Now open the lid of the pressure cooker and mash the saag well with a mortar and pestle.
Now add little water to the corn flour and make a thick paste, and then add little by little to the ground saag and keep mixing with a ladle. Place the cooker on the gas, and let the saag boil on medium flame without closing the lid, keep stirring the saag in between, so that the corn flour mixes well with the saag.
Now put ginger and green chillies in the mixer and grind them finely. Heat a pan on the gas, and then heat mustard oil in it. As soon as the oil gets hot, put asafoetida in it, and then add ginger and green chilli paste.
Now put the boiled saag, and add salt according to taste and cook the saag for about ten more minutes. Here, very tasty mustard greens are ready.
Serve it with hot maize roti, millet roti, wheat roti or rice.
