Method of making Bhindi Dahi Masala :
First of all wash and clean the ladyfinger, and then cut it into two pieces and make a small slit in the middle. Cut all the ladyfingers in the same way.
Now add coriander powder, cumin powder, fennel powder, Kashmiri red chili powder, and kasuri methi to the curd and mix well, and let the spices swell with the curd for five minutes.
Now heat a pan on the gas and put oil in it, when the oil is hot, put ladyfingers in it and let it cook for a while on medium flame, and then add a little salt to it. Fry the ladyfingers lightly by turning them over and then take them out in a plate.
Now again put some oil in the pan and heat it and then add cumin seeds to it. When the cumin seeds start crackling, add asafoetida to it, and then add grated ginger.
Now finely chop tomatoes and green chillies and add them, and fry them well for two to three minutes. Now add the masala which you had mixed in curd, and by lowering the flame fry the spices well.
When the masala is fried then add a glass of water to it, and then add garam masala to it and cook the gravy well and then add ladyfinger and chopped coriander leaves and cook for two to three minutes and then turn off the gas.
This vegetable has to be kept a little loose, do not add much water to it. Now a very spicy and tasty vegetable is ready. You can serve it with rice, roti, puri or paratha.
