Ingredients for making Shirley:
1. Potatoes: 250 grams
2. Fenugreek leaves: 200 grams
3. Coriander powder: 1 tablespoon

7. Amchur powder (dried mango powder): 1 tablespoon

12. Salt to taste
Method for making Shirley:
To make Shirley, first, cut the potatoes thinly with the peel on, just like you would for making potato bhujia (a type of potato stir-fry). Now, put water in a pot on the gas stove to boil, and then add half a teaspoon of salt and the washed potatoes.
Let the potatoes boil for just five minutes, and then remove them from the water and place them in a bowl. Finely chop the fenugreek leaves or chop them in a food processor, and add them to the potatoes.
Now, add the chopped green chilies to the potatoes and fenugreek leaves, add grated ginger or ginger paste, red chili powder, coriander powder, roasted cumin powder, amchur powder, garam masala powder, gram flour, and salt to taste. Mix everything well.
Now, place a pan on the gas stove and heat the oil. Once the oil is hot, shape the potato and fenugreek mixture into patties and place them in the oil. Fry three to four patties at a time over medium heat, turning them occasionally until golden brown and crispy. Then remove them from the pan and place them on a plate. To make the green chutney, put the coriander leaves, green chilies, ginger, lemon juice, and salt to taste in a blender. Add a little water and blend until smooth.
