Ingredients for Ragi Laddu:
1. Ragi: 500 grams
2. Oats: 250 grams
3. Dates: 250 grams
5. Raisins: 250 grams
6. Almonds: 150 grams
7. Walnuts: 100 grams
8. Cashews: 25 grams
9. White sesame seeds: 2 tablespoons
10. Flax seeds: 2 tablespoons
11. Pumpkin seeds: 2 tablespoons
12. Muskmelon seeds: 2 tablespoons
13. Green cardamom powder: 1 tablespoon
14. Ghee: 200 grams
Method for making Ragi Laddu:
To make healthy Ragi Laddu, first remove the seeds from the dates and place them in a large bowl. Add the raisins to the same bowl. Add hot water and soak dates and raisins for 15 minutes.
Now heat a pan on the gas stove and add all the dry fruits and white sesame seeds, flax seeds, pumpkin seeds, melon seeds and roast them well on low flame.
Now take out the roasted dry fruits on a plate to cool down, and add oats in the same pan and roast them well on low flame.
Now take out the roasted oats on a plate and let them cool down, and again in the same pan, first add some ghee, then add ragi flour and roast it well on low flame and gradually add all the ghee. Add ghee and roast it well and when it starts smelling good, take it out in a large pan or plate.
Now put the roasted dry fruits in a mixer and grind them coarsely. Grind the oats coarsely as well. Now take out the dates and raisins from the water and put them in the mixer and grind them finely. If needed, add two to three spoons of water and grind them finely.
Now heat the pan on the gas again. As soon as the pan is hot, add two spoons of ghee in it and add the date and raisin paste. Then fry it well on medium flame.
Now add the coarsely ground dry fruits, coarsely ground oats, and roasted date and raisin paste to the roasted ragi flour. Mix everything well and prepare small laddus. There you go, without sugar and jaggery, very healthy and tasty ragi laddus, rich in calcium and iron, are ready.
Note: Roasting all the dry fruits and date and raisin paste will increase the self life of the laddu, then you can keep it in a box for four to five months without keeping it in the refrigerator, it will not spoil at all.
You can add more or less ghee and dry fruits as per your requirement, or if you do not have any of these then you can skip them.
