12. Salt to taste
13. A pinch of asafoetida
14. Kasuri methi
Method for making Pickled Eggplant:
For making pickled eggplant, if you can find small eggplants, they are best; otherwise, you can use long eggplants. Cut the brinjal and wash it thoroughly by changing the water two to three times.
Now heat a pan on the gas and put oil in it and let it heat, and as soon as the oil gets hot, put the chopped brinjal and a little salt in it and cook the brinjal on high flame for some time, and then reduce the flame a little and fry the brinjal well.
Now take out the fried brinjal in a plate and put about two spoons of oil in the same pan and put panchphoran. As soon as the panchphoran starts crackling, add asafoetida and curry leaves, stir for a minute, and then add the finely ground tomatoes and green chilies.
Now add coriander powder, turmeric powder, Kashmiri red chili powder, dry mango powder, and kasuri methi and mix well. Fry the spices well on medium heat, then add the fried eggplant and garam masala. Reduce the heat completely, mix the eggplant with the spices, cook for two to three minutes, and then turn off the gas.
